Southwest Chili Soup Mix
You will need:
1 1/2 pounds ground beef
6 cups water
3 cans (15oz each) Tomato Sauce

Empty beans into a sauce pan, leaving the seasoning/corn meal mix in the jar. Rinse and pick through beans. Add enough water to cover the beans completely.  Soak overnight in the refrigerator. Drain and rinse.
Empty presoaked beans into a large sauce pan and add 6 cups of water. Boil slowly for approximately one hour (or until beans are soft). Green splits may appear overcooked. Brown ground beef and set aside. Once beans are tender, drain water and add ground beef to the pot. Stir in the cans of tomato sauce and the seasoning/corn meal mix from the jar. May need to use a long kitchen utensil to help remove. Simmer for 20 minutes before serving, stirring occasionally. Garnish with shredded cheddar cheese.  
Season to taste.  (Makes 8 servings)
